The storyThe Beans
Twelve pounds at a time. A single drum roaster turning slow enough that the first crack sounds like a held breath. We cup every batch before it leaves the roastery, and what doesn't pass never reaches the cart.
The beans come from three farms we've visited, two in Colombia and one in Ethiopia. We pay above the Fair Trade floor because the coffee is above it. What arrives at the cart is the same coffee that left the roaster — nothing blended, nothing stretched.
The Pour
